Mango Paloma Cocktail
I love margaritas, this is basically a grapefruit - mango margarita sans triple sec and sans any lime. A paloma is traditionally tequila with grapefruit soda, San Pelegrino is a good version to use if you want to try the soda version. I make homemade juice most weekends in warmer weather, and post vacationing I have been craving the local mangos of the caribbean and finding ways to incorporate them into my diet. Last week's cocktail was mango as well, but very different from this one.
You can make mango-grapefuit juice in two different ways. Number one is the juicer method. Mango really only goes well through a juicer if you have one that goes on low or is a truly slow masticating juicer. You could also try running the pulp through one more time if it's really wet still. This makes a nice combined juice with little effort. You can also use the non-juicer method (which I still do often).
Juice your grapefruits with a kitchen juicer ( I use one that catches the citrus in a lovely glass container - I found it for almost nothing in a vintage store). This will make your grapefruit juice. Half a grapefruit will be enough. Then take your mango and blend it in the blender until its pretty liquidy. Squeeze the blended mango over a mesh strainer until all the liquid comes out. Add to your grapefruit juice and you have a lovely sweet nectar of the gods!
