Watermelon Grapefruit Juice with Ginger and Mint

Watermelon is the name of the game this summer, seen all over the inter-webs. In cocktails, salads, we just can't get enough of this delightful melon this summer. On a whim a while back, I added some watermelon to the juicer, thinking that it wouldn't get all the juice out and I would be left with a bucket of mush and no great juice. My juicer did a pretty good job of extracting the watermelon juice here! I have a Breville Juicer that goes down to a lower speed level which works great for greens, melons etc. This might not work as well for a cheaper kind with only one speed, so instead make your watermelon juice in the blender and strain with a mesh sieve to get the fiber out.

I love the sweet-lightness to this drink, and pretty low in sugar and calories in comparison to a lot of other fresh fruit drinks (vs veggie) it's perfect for an afternoon pick-me-up!


WATERMELON GRAPEFRUIT JUICE

makes one 16 oz serving


INGREDIENTS

  • 2 cups chopped watermelon

  • 2 tbs fresh mint

  • 1/2 one apple

  • 1 inch ginger

  • 1/2 grapefruit peeled

INSTRUCTIONS

Start by washing and chopping and prepping your fruit. It's especially important to peel your grapefruit. While the pith can be juiced in a lime or a lemon, if you juice the entirety of a grapefruit it becomes VERY bitter, not just a tad.

You always want to start with an easy item to juice, such as the grapefruit, then the complicated stuff in the middle, put the mint and the ginger in the shoot at the same time and follow with your apple, this pushes through those two items.

Finish with the watermelon, and skim off any foam before serving. Enjoy!
