Radish Baguette with Chive Butter
Makes One Baguette
INGREDIENTS
- 1/2 baguette
- 1 Tbs chive butter
- 4 radishes
- 1 Tbs chive butter
- 1/4 cup arugula
- dribble olive oil
- 1 tsp lemon juice
- sprinkle sea salt
INSTRUCTIONS
Start by prepping the chive butter. Mix four tablespoons unsalted softened butter with fresh chives. The smaller the chives the better, the onion flavor is softer.
Then assemble the sandwich. Cut baguette in half, I like to use the seeded half if I have a choice or option, and spread about a tablespoon of the chive butter over the top.
Slice the radishes thin and lay across the top. Biting into a baguette is pretty difficult, so be sure not to layer too much or it will be hard to eat.
In a small bowl add the amount of arugula you want on your sandwich with a tiny dribble of olive oil and a squeeze of fresh lemon juice. Mix and toss the salad right on your baguette. Sprinkle with good flaky sea salt and enjoy!
Chive Butter
- 4 tbs softened butter
- 3 tbs freshly chopped chives
Mix together thoroughly for a compound butter of your dreams.
