Creamy Avocado-Cilantro Dressing
I started making my own dressings after a few I bought from the store fell flat. They were good, but they weren't EXACTLY what I was looking for. A lot of the time for me, it's the multi-purpose dressing slash dip slash sauce that works with not just salads.
Ever since high school and the local falafel place nearby, I have had a thing for the ultimate falafel meal. This is great on a falafel wrap, salad, not only a regular lettuce salad. I also like this in replace of sour cream and avocado on a burrito bow. Add some leftover rice, black beans, cherry tomatoes and roasted cauliflower with this stuff, yup.
Having this in the fridge takes crudite to the next level, lunches (use it in replace of mayo not just on salads) and dinners like falafel and burrito bowl. This stuff gets a lot of use in my kitchen and I am sure it will for you. Consider adding a half of a jalapeño de-seeded if you like it spicy, and more water and lemon juice (equally) if you like it to be a liquidy dressing. I like the creamy-ness so that the multi-purpose stretches further.
Creamy Avocado Cilantro Dressing
INGREDIENTS
1 avocado
3/4 cup greek yogurt
1/3 cup olive oil
2/3 cup water
1 garlic clove
1 tsp salt
1/2 tsp fresh cracked pepper
juice of one lemon
1 cup cilantro
1 cup parsley
INSTRUCTIONS
Place all ingredients in blender except water. Blend on highest setting, add water slowly to then become the consistency you would like. Add just a little bit at a time.
Store in fridge for 3-5 days
Use on salads, in replace of mayo, on roasted veg like dribbled on cauliflower and carrots, with veggie sticks, as a salad dressing, falafel sauce and more!
