Fresh Beet-Dew Juice
Beet Juice. It's doesn't get the best rep. It's a little earthy for many and without a great recipe it can be what I think is one of the worst fresh juices around.
I had a juice from a local vegan bakery that was new. In fact I didn't even realize it was a new recipe until I tasted it. I thought it was their old beet juice, which was good, but when I had this one I was delighted. I realized they figured out the secret to making Beet Juice amazing. The secret is Honeydew! Now, I am always looking for a great way of cutting the juices a bit, less sugar more water content, which is why I love citrus. I usually use grapefruit for this purpose. I had tried cantaloupe in a couple of juices, but nothing has "clicked" as the perfect recipe quite yet.

Fresh Beet-Dew Juice
INGREDIENTS
- half of honeydew melon
- 4 - 1 inch cubes of pineapple
- 3 small beets
- 1 inch of ginger
- 1 lime
INSTRUCTIONS
This makes two 8 oz fresh juices. Make sure you clean all ingredients, do not juice skins unless fruits are scrubbed and clean. Peel the ginger, honeydew and the beets. Juice all ingredients. Make sure when juicing the ginger that you pass something though right after that kicks it through. In this recipe the beet is a perfect solution instead of the apple. Add more pineapple for sweetness.
